Cream cookers

With the cream cookers from HEIDEBRENNER it is easy to cook creams and jams, to heat glazes, to blanch fruits or to melt sugar. The cookers can be finely adjusted, the heat is generated immediately, and they are also characterised by strong performance and the highest safety standards.

Cream cookers have been specially developed to meet the needs of confectioners.

They include precise temperature control and even heat distribution.

Ranges

Ranges from HEIDEBRENNER are generously designed gas cookers with a continuous plate and removable cooking hobs. They are made for the toughest continuous use and the highest demands. 220-mm-wide surfaces allow food to be placed directly on the heatable top plate. In addition, thanks to the middle shelf, there is plenty of storage space for keeping food warm. HEIDEBRENNER uses drawn or welded hobs made of chrome-nickel steel. The housings of the cookers are also made of this material. Range cookers are also available with other dimensions, with fittings on one side, with different burner capacities and for natural or liquid gas.

Due to their dimensions, range cookers require a large floor space and have a somewhat higher energy consumption, but they are suitable for a variety of cooking techniques and dishes.

Snack cookers

Snack cookers are the perfect solution for restaurateurs with little space, but who still need the greatest possible power. At HEIDEBRENNER they are available as freestanding, table-top and built-in units with up to 6 burners and an output of 8.0 kW to 12.0 kW.

These types of cooking zones take up much less space and are therefore ideal for food trucks, snack stands, cafés or bars. The cookers heat up quickly, so they are quickly ready for use. .

Stovetop cookers

You need compact and portable, but just as powerful cookers? Then our stovetop cookers are the perfect choice. You can heat small and large quantities of food and liquids quickly – thanks to one to four cooking zones and up to 17.4 kW. Stool cookers often complement or even replace larger cookers. In our range, this professional cooker variant is available in gas-operated and electrically operated form.

All models have infinitely variable heat regulation, which facilitates the cooking process. On request, HEIDEBRENNER cooker cookers are also available with a trolley. This means they can be used anywhere – indoors or outdoors.

Cooking hobs

Kochmulden sind Cooking hobs are built-in hobs that are installed on the worktop of a kitchen. They serve as a separate cooking surface on which pots and pans can be placed. HEIDEBRENNER hobs are powerful built-in appliances that run on gas to ensure perfect results in your kitchen. One to six burners ensure flexible installation in your kitchen, according to your wishes. The cooking zones can be freely combined in 3.5 kW or 5.8 kW, allow precise temperature control and a fast heat-up time. They are also easy to clean and maintain.

These are the features a catering oven should have:

  • A catering oven should heat up quickly and provide constant and precise heat regulation to enable efficient preparation of dishes.
  • The materials used should be exclusively high-quality and robust varieties, such as stainless steel. These can easily withstand the stresses and strains of a professional kitchen.
  • Ideally, gas cookers have different cooking zones and burner sizes.
  • Various safety features such as a flame failure safeguard, overheating protection or child safety locks are also a useful plus.
  • Easily accessible controls and a clear arrangement of functions make it easier to use a professional cooker.

The correct cleaning of a professional cooker
Cookers must be cleaned regularly. The HACCP (Hazard Analysis and Critical Control Points) concept applicable to the food sector and catering emphasises the need for thorough cleaning and disinfection to eliminate potential sources of contamination and ensure food safety.

Before cleaning, switch off the cooker and allow it to cool down completely. Warm soapy water, cleaners suitable for the surfaces and a soft cloth or sponge are already sufficient for most soiling. Make sure to thoroughly clean, not only the cooking surface but also the edges and the controls. For stubborn stains or encrustations on the surface, use special cleaning agents that are suitable for catering cookers. Follow the manufacturer's instructions.

At the end of cleaning, remove any cleaning agent residue and rinse the surfaces thoroughly with clean water. To avoid limescale stains, rub the cooker dry with a soft cloth.
